The only problem I could see with a hollowbody is they feedback more readily so they can be squealy when you use them for heavy music. But I find the right hollowbody guitar has a lot of personality to it's sound. I'm definitely a fan.
Hofner is making some pretty nice hollowbody guitars in their CT (Contemporary) line right now. I've heard good things about Eastwood's guitars too.

hollow guitar and high gain is usually bad news, feedback city. guy of fugazi remedied this problem by stuffing foam into his rickenbacker - which, by the way, is "chambered" and much less hollow than a hollowbody. I have a ric copy and it doesn't suit "heavy" music anywhere near as well as my les paul(s), I just got it to screw around with that post-punk sound with some gain but not 5150/triple rec-style super crunch. I feel like your band is so close to the crunch thing that this might be tricky. you even know that my sunn model t isn't as high-gain as other amps.
the pickups are probably just as big a part of the picture as everything else. but the point of a hollow body is to resonate the string sound, right? so if you're in a loud room, the feedback is going to resonate as well, and if you're giving it lots of gain, all those overtones are going to create lots of feedback. in the case of chambered guitars, the point is often to reduce the body weight while retaining a broad body, so they might suit it a liiiittle better.
then again, I feel like I saw a band at the fest that had a semi-hollow with high gain and it sounded fine in a big hall. so what do I know? this is just me trying to take what I've learned and make some sense of it.

that's awesome! and you actually might find that mid-position single coil to be really cool. my old ollld guitar had one and I loved the sharpness of it.
